Q: Do the "flakes" melt when cooked or will they have texture on cooked meat?

The flakes are thin and will dissolve just like regular salt when put on meat before cooking. For textural contrast, add the salt as a finisher post-cooking and right before serving. Hope this helps and thank you for your interest!
