Good question. It is my understanding that ube is a purple YAM (Dioscorea alata) Sweet potatoes are a completely different plant (Ipomoea batatas) and it appears to me that most of the products being sold as ube are actually purple sweet potatoes.

Q: Is this made from raw or cooked sweet potatoes? i'm hoping it's cooked and then freeze dried.
