The freeze dried candy is not hard, but it does have a crunch to it. I guess the freeze dry process actually plumps the candy up and when you bite down you get a crunch but it is a soft crunch, if that makes sense. It’s a great candy!

I doubt these are vegan, as real lemon heads are not. They taste like lemon heads, and the "dust" in the bottom of the bag tastes like pure sugar. I love them though, but I actually like real lemon heads candy.
