VERY SHARP
I’ve always wanted to have a very sharp Japanese knife and if you are not sure which one to start with, I would recommend this one. Super sharp

Easy to hold and light weight...

Pros: It's very sharp (atm), is well balanced and fits comfortably in the hand. Made in one piece and handles are fitted into it nicely.Cons: It's not 'many layers of stainless steel', it's probably just two. The inner will be VG-10 Stainless, the outer apparently Damascus steel, but the 'many layers' are etched onto the blade, not the result of layered metal. Also made in China not Japan which should tell you everything you need to know.Personally I feel a little conned, but I'm not giving it back as it's bloody sharp. I should know better, so as a bit of advice I would suggest you look a little higher up the financial scale for a Japanese blade, or settle for a stainless from someone like Sabatier at half this price. Either way would be better.
