Thanks for the question! Yes -- all four work at the same time and the quality is excellent.

Q: Will this transmit through an existing network switch?

Sorry to say - no. It will not run through a switch as it carries POE. It uses all the wires for full HD.

Q: If I connect this to my laptop, will this function as a “screen/display” source? As in, will it be my 2nd display while my main display is the laptop?

I can't say for sure. It sounds like you're wanting to use it to expand your desktop view and I don't think it's meant to be used that way. I've never tried it. Next time I go to my mom's house I'll try and bring my laptop along and give it a go. I'm going to guess there's some kind of dialog that happens between a video source and a monitor via the HDMI cable.
