Hold up better to cooking than 1 year age otherwise very similar.
Having cooked through 2 5 lb bags of their 1 year aged stuff I've nailed down the technique for risotto.I made a simple saffron risotto. The texture is more uniformly al dente than their 1 year stuff and holds up better to cooking. Honestly I used so much saffron and Parmesan cheese I can't say if the flavor of the rice is any different but the texture is noticeably different.Is it worth the cost? I had a 25 dollar gift card laying around and thought why not, otherwise I would still continue to get their 1 year old stuff in the 5 lb bag.

Sorry, I can't tell the difference between this expensive version and the version that costs half as much. Had to try it, though.

Not worth the money
After living in Bologna for 3 years i learned a great deal about rice . Carnaroli is the only rice to use but this brand was just ok not worth the money. You can get the same quality from rice at a specialty shop for less than half the price per lb
