I had purchased this Modernist Pantry before, my first time using gum acacia, and it was running low. I ended up buying 4 or so different brands to see if I could find one that would be more cost competitive. I had no idea how difficult hydrating regular ones would be, with many sticky, clumpy messes. I typically mix it in to cold beverages by just dumping a teaspoon on the top and incorporating it with one of those handheld milk frothing wands. It also seems to have a greater effect for the same volume of gum than the others I tried, haven't measured if it's denser so I don't know if it actually uses less product, but one teaspoon goes farther.I'm still going to use the regular gums by hydrating them in hot water for larger projects where the time required to prepare them has a smaller effect on the total time. For anyone that wants to use a small amount fairly frequently, this gum saves tons of time and headaches.

Good replacement for other gums in keto recipes. I am able to replace xanthan gum in most keto recipes. You don’t get that slime feeling with this. It’s good in breads to hold the perfect amount of moisture.

Because after buying two bags of this, I went to an Indian Super Market, and they sold the same size bag for roughly $3. This cost me $16 per bag. Erg. BUT, it makes great simple syrups for awesome cocktails, and I will gladly use it all.

I ordered this to make gomme syrup for adult beverages. It created a beautiful, light colored syrup that doesn't affect the beverages' intended colors. Happy as a clam!
