Green Pan is highly ranked, preferred, and it's for a good reason
They say that people really do read reviews. I agree as I am one of those people. I also write reviews, not for every product, but definitely for those products that warrant a review. Green Pans Valencia series is one such product. I purchased these pans and pots to replace two other sets of non-stick we have. One is an original Emeril Lagasse set from 2004. Shows how good those pans were. The other a Gotham Steel Copper set from 2018, not so good. I felt it was time for a unified looking set and I had just watched America's Test Kitchen review cookware. They're top pick for non-stick was the Green Pan Valencia series. Consumer Reports rated them very highly as well. I had a simple set of Green Pans shortly after they came out on the market in 2013 in the second home we had. Our youngest son has them now, so I was already familiar with the brand. It was the Gotham Stell ones that replaced those pans. But as I noted, they weren't as good as the Green Pans or The Emeril set. So, when Amazon had a sale on the Green Pans, I pulled the trigger. We've had the pans now for a couple of weeks and followed the pre-use instructions. First, they got a light wash. Then, on their first use they were heated on a medium heat for a minute or two before any oil was added. By adding oil, I mean a tablespoon or less. To date they have been wipe out clean after frying. Just like on TV. They are very substantive in the hands, but not heavy. They heat evenly and there is no noted running of liquids or oils to one side or the other showing the pans are flat. They are rated for all types of cooking surfaces, but we have electric and have noted the setting of the stove is a little lower on all burners, indicative of a good thorough heating material. I hope to get a couple of decades out of this set. But I do note, my wife kept a couple of the small 8 inch Emeril pans for eggs.

Highly recommend
I’ve been using this pan for about 6 months now — and it still works GREAT. Food just doesn’t stick. Very reasonably priced. Highly recommend.

Non-stick!
The 8” pan is light weight and works well on the induction stove top. The nonstick surface is fantastic for cooking and cleaning! The pan handle doesn’t get hot and feels comfortable to grip. I really like this pan!

Almost non-stick when you know the trick
Ceramic cookware is not as non-stick as some articles will have you believe. However, it get's close enough if you take several seconds using a silicone spatula to thoroughly "paint" the pan with a little hot oil before each use. Doing this completely changed my opinion of this pan's non-stick performance. Moreover, I expect this pan will last a lot longer than my previous Teflon pans, will be better for my health and safer for the environment.

NOT NON-STICK AFTER A YEAR
i am writing this review having used the pan for 1 year and 4 months. After 1 year of use the pan is no longer non-stick. It was touted as the healthiest so I didn't mind spending the money on the most expensive pan on Amazon. I followed the instructions which stated: use silicone utensils, no metal and no spray oils instead use cooking oil straight from the bottle and spread around with a paper towel. I've put up with the nuisance of food sticking for the last 4 months - today was the last straw. Flipping my breakfast egg caused it to half stick and shred into a mess even after oiling the pan up with olive oil. Well folks, here is my time tested review. Do with it what you will...

Great pan, but manufacturer reports: not truly dishwasher-safe
In fact, I give the pan 5 stars. I subtracted 1 star for the false advertising. The page prominently reports "dishwasher safe". Instructions included with the pan report that to prolong the lifespan, avoid using a dishwasher and instead, clean with a soft sponge. Fine ... I will hand wash with a soft sponge.

Surprised i have had it for months now
I am use to good quality traditional non-stick pans. This is not like anything I have used before, but I seasoned it and used it for the first time yesterday. After using it I am not even sure I needed to season it. Before cooking eggs in it I did spray the pan with PAM. It does say use oil in the pan. Which to me defeats the purpose of a non-stick pan. However if PAM is enough oil to do the trick I am okay with that. It also says you can use melt utensils with the pan, I did not try that. I do season my pans in the oven though so I do know it is oven safe at least up to 375. It did work better or at least the eggs slid around in it better than most non-stick pans that I have used. After months pf use I have not had any difficulty with these pans at all. I can cook in them and wipe them clean with a paper towel. It does say they are dish washer safe, but I have not needed to put them n a dishwasher nor have I ever put non stick in the dishwasher. I have always heard that is not good for them. If a long time ago you bought the green pans they advertised on TV and you hated them because everything stuck to them, these are not those pans> I bought those too and hated them. These are the best non stick pans I have ever had and I have had the "best" or at least the most expensive pans. I have however only used the 8" pan.
