This book is a must for any restaurant manager who ever wondered why there is less money in the till than he/she thought there should be. It is also for any restaurant patron who upon driving home from the restaurant thought that the check amount was much higher than he/she was expecting but was too busy conversing with a friend to examine the check in detail.The authors explain that every scam depends on the customer paying in cash. No cash, no scam. It almost makes you want to put up a sign that says, "Only Credit Cards Accepted. A must read for restaurant managers and owners
This book is a must read for anyone in the restaurant industry. Some of the content is dated and even out of date, given the technology today in POS systems to prevent certain tactics - but it is still a worthy read to mind you of the mind-set of the servers and staff. My copy was used - making it even a better read, since it had beer stains and all sorts of water damage - probably from its time behind the bar.

The book is a must read for those who are in the food and liquor industry. The Aloha POS system has the ability to identify these scams.

For any manager in the restaurant business, this is a must read. Especially if you are just starting out as a restaurant manager.

Too old and dated to be feasible
With today’s point of sales system this book is completely irrelevant. The only relevant chapter is chapter 20 and it is only a few pages long. In it they explain to use the split table function to create additional invoices with the same item being swapped to different “seats” before printing out. Not worth the investment in the book for what you get by any means

The book was good and helpful to me as CFO for a restaurant to know what to watch for, but I kept thinking how the proceeds of the book should've gone to repay some of the theft!

Great quick read. Very informative for anyone working in a restaurant loss prevention.
