carbon steel is the bomb!
I got a great knife almost free because it was a "second" which amounted to a tiny ding on the spline. I went over the edge with jewelers loupe and it was perfect. This knife is the third most used in the block and has not needed a resharpening yet (I honed it before first use). A great slicer and great for raw meet or as a carver. I also snagged an old hickory paring knife which is #2 in the block, resharpened once in its 4 weeks of duty. I am enjoying watching the discoloration process as these knives slowly evolve into the dark gray color carbon steel is known for. I like to allow the process to occur over time rather than all at once as some folks prefer (vinegar bath). After using my old hickories once, my wife requested I sharpen all her knives. It took a few hours to bring her stainless set up to snuff...it takes about 3 minutes to edge an old hickory.

This replaced my old worn out Old Hickory knife. I have been using this brand since learning how to cook in my Grandmothers kitchen...A long time ago.

This is a second so you could wind up with anything.
Just be aware this is a second. The knife sent to me had a small ding in the blade. I missed '2nd' in the description. My bad...as they say.
