## Description

Cider House select yeast is a high ester-producing strain, creating exceptional flavor. Trace nutrition has been included in this sachet to ensure the best possible cider quality through good healthy yeast. Our active dried yeast is suitable for all types of ciders and is able to ferment under various conditions. The capable fermentation temperature range is 54 - 82 degrees, however for optimal performance the recommended fermentation temperature should be between 60 - 70 degrees and maintained there for best results. To prevent extended lag times and risk of bacterial contamination be sure that the juice temperature is above 60 degrees prior to pitching the yeast. Sprinkle contents directly on up to 23 L (6 US Gal) of juice. Ferment at 18-24 degrees C (60-70 degrees F) for best results.

Review: Like magic fairy dust for cider - Works well. Making home hard cider from freshes pasteurized cider from a local farm. I use a cheap beer kit and each pack has enough for 2 batches. Cider fermented well and is conditioning now. Not sure the ABV, but seems nice and high with the flavor preserved. Did conver ALL of the sugar to alcohol, so you will need to add some sweetness at the end unless you like a real "brut" type flavor.
Review: Yeast that gives a quick ferment - I'll preface this review by saying that I had zero fermentation experience prior to using this yeast. I gave 4 stars for the rating of the yeast properties because I know nothing about yeast. I bought this in attempt to duplicate the Woodchuck hard cider and so far have had drinkable yields. First fermentation I let go nearly 14 days which was long and the yeast died off but it had a good alcohol content. I transferred and added sugar and yeast to the already fermented cider. After an additional 10 days it was at or beyond the ABV of wine and had a strong alcohol smell. There was an off flavor most likely due to the old dead yeast from the first fermentation. I was trying to find out the alcohol tolerance of the yeast but gave up on that experiment because it was pretty much beyond the point where it had any good taste and was more like apple wine. If you are looking to produce alcohol for the effect, this has done a very good job and so far the only limit I have found is the amount of sugar. I have had good luck with fermentations of 7 days giving what I would estimate around 4% ABV but I have yet to invest in a hygrometer to measure the before and after SG. There is very little yeast flavor beyond that which I have tasted in any normal beer or other hard ciders. I'm positive someone with experience would have no problem getting good results.

**Q: Can I store unused packets of this yeast for 6-12 months?**
A: Yes you can keep the unused packets in the fridge.

**Q: How many gals does one pack of yeast yeild?**
A: The Cider House yeast will work for up to 5-6 gallons.

**Q: What is the maximum alcohol percentage that this yeast will ferment to? I have cider that is starting at 1.05 SG and don't want it to be 9% alcohol.**
A: I just bottled a cyser (a mead made with apple juice) and it fermented out to just over 16% ABV, so given the right conditions this yeast can chew through a lot of fermentable sugars.  It fermented out dry at 0.997, so who knows, it might have been able to go even higher.

**Q: I pitched this in a cider that started with og ~ 1.058, and after 6 days it seems to have stopped at ~1.012-1.014. should i add energizer? more yeast?**
A: The yeast you pitched seemed to multiple and work at fermentation (reducing O.G. to current s.g.).  I usually add 1/4 tsp./ gallon “yeast nutrients “ (such as Fermax or Fermaid “O”), at the same time I add pectinase, at the onset of assembling the ingredients.  I usually use a sanitized wire wisk to entrain some air at the beginning, too.  My fermentation’s usually ferment quickly during the 1st week, then more slowly for 1-2 weeks more.  I will frequently rack the cider off the yeast, from primary to secondary after 2 weeks, and that seems to re-start the yeast airlock activity for a few days.  If the fermentation seems to stop or go more slowly, I will sometimes agitate the sealed fermenter to “rouse” the yeast, but the last 2 weeks (In secondary)  are always much slower.  My cider fermentations always seem to end at 1.009- 0.999, even with less-attenuating English Ale yeast.  I hope that helps!

Made very first batch of Hard Apple Cider with this yeast. Final ABV = 5%. A smash hit at Thanksgiving, gallon went away very fast!!!
