All Masa harina is made from corn that has been nixtamalized--soaked and cooked according to ancient, traditional Mesoamerican practice using slaked lime (calcium hydroxide), in order to make the corn more nutritious and digestible. This process also allows the corn flour/masa harina to form a dough when mixed with water, which is not possible with cornmeal (plain ground corn).
