Great resource for professionals and amateurs alike
Follows in the same vein and format of their previous wild sweets book, but this one focuses clearly on incorporating one or several forms of chocolate into each dish. Well conceived and organized the photography is outstanding. Great for pushing the boundries of chocolate flavor pairings for both sweet and savory dishes without seeming contrived or thrown together, I'd say a match for Fred Bau's "Fusion Chocoat" but without the heafty price tag. Formulas are simple and thankfully are also given in metric amounts (those of you complaining of lackluster results with pastry should do what professionals do: weigh your ingredients!!!) A great resource for inspiration and the section on drinks is a nice additon. In between the sections are descriptions of the chocolate making process and insight and tips on utilizing ingredients like agar-agar. A solid buy.

Intriguing
Definitely some interesting combinations of flavors. It's fun to read and look at the pictures.....looking forward to trying some of the recipes.
