What's the difference between this catan family bundle and settlers of catan?

Family Edition is meant to be a more streamlined setup, but the game itself is the same rules. Instead of having every shore, hex, and number piece be separate, it combines several so there are only 6 chunks to piece together instead of the original 43. Also, the artwork is different, the pieces are plastic instead of wood, the cards are mini size, and it is not compatible with most standard Catan expansions/extensions. If you want an actual kid-friendly version, there is Catan Junior, otherwise I would just get the standard edition...unless you really think the standard set-up is that much of a hassle.

Could an 8 and half year old grasp the concepts and play?

We taught our 4.5 year old and developed an alliance system where he has his own pieces but we team up (2 per team) and work together to collect a total of 20 victory points per team i stead of 10 ea. It adds a new level of strategy for our older child and helps the little one learn while having an adult help. Now he is almost 6 and can play independently.

How young of a player could still enjoy this version?

The folks above are right - a fairly sharp 7 or 8 year old can hang. I played with my daughter (12) and two sons (just turned 9 and almost 8). They loved it I coached the youngest one strategy early on but by mid game he had it down. If your kids like card games or Pokémon or Minecraft they probably will enjoy this.

Which Catan game would be best to start with???

The base game is great! The family edition board has only 6 pieces for limited board variations. I recommend the base game with the extension pack so you can go up to 6 players. It does not matter which variant, Star Trek, Ancient Egypt, or original the game is the same only the pieces and resources are different. ENJOY!
