Cold brew or cold press refers to the process of steeping coffee grounds in water for an extended period. The water is normally kept at room temperature, but chilled water can also be used. The grounds must be filtered out of the water after they have been steeped which is why coarse-ground beans are typically used. This makes the filtering process easier. The result is a coffee concentrate that is often diluted with water or milk, and can be served hot or over ice. Cold brewed coffee naturally seems sweeter due to its lower acidity. Because the coffee beans in cold-press coffee never come into contact with heated water, the process of leaching flavor from the beans produces a different chemical profile from conventional brewing methods. Cold brew coffee has a smoother, bolder and less bitter flavor profile and contains higher levels of polyphenols and caffeine due to absence of heat in the brewing process. Cold brew coffee is not to be confused with iced coffee, which generally refers to coffee that is brewed hot and then chilled by pouring over or adding ice, though it can refer to cold brew coffee served on ice. How does High Brew make their coffee? A blend of 100% Fair Trade Arabica coffee beans are roasted to a medium roast then coarsely ground. These grinds are then applied to a proprietary extraction process using slightly chilled water. The final coffee extract is then blended with sugar, reduced-fat milk and natural flavors. What does arabica mean? Arabica and Robusta are the two different species of beans grown commercially. Arabica is originally indigenous to the mountains of Ethiopia. It is also known as the “coffee shrub of Arabia”. It has since been introduced to many other regions of the world. Arabica is much smoother and less bitter than Robusta beans. Arabica takes about seven years to mature fully, and does best with 40–59 inches of rain, evenly distributed throughout the year. It is usually cultivated between 1,000 and 1,500 m altitude Why does High Brew use arabica beans if robusta contain more caffeine? The answer is bitterness. Robusta is much more bitter than Arabica and cold brew produces a smoother less bitter flavor. This is why 70% of the consumers prefer Arabica. And why High Brew prefers Arabica for their cold brew. How much caffeine does high brew have? The flavors Mexican Vanilla, Salted Caramel and Dark Chocolate Mocha all contain 139mg of caffeine. The Double Espresso has 163mg. 100% of the caffeine is naturally occurring from their 100% Fair Trade coffee beans. Is High Brew Fair Trade? What does Fair Trade mean?
