Including this Prague powder number one in my marinade guaranteed a great texture and after months, maybe more than a year of testing, in that time I have found for maybe a week or two, the jerky continues to develop it's end result while sealed in a plastic bag. I never saw this post smoking improvement in previous batches before I started using this special salt. After my last batch finally achieved all the goals for which I have been aiming, I sent some to my brother along with a sample of my homemade chipotle seasoning and the resulting jerky that I have made with this salt blend. I can't wait to find out what he does with this stuff because I think it would be cool to go into business selling beef jerky.
