Mercy. This is indeed bitter. In fact to be honest too bitter. Has a very long and bitter aftertaste, too. The pound of "bark" [more like wood chips than bark] will last to my dying days. Of the three bitterants I have tried [quassia, cinchona, and gentian] this is the only one that is nearly colorless and odorless.This entire odyssey to find a bitterant for a craft tonic to replace the grocery store mass market stuff has been quite a trip. It so far will most likely end here as now the task at hand is to find a palatable balance between bitter and the other tongue taste map senses including the umami. Am thinking if done well just add it to everclear or wodka and skip the gin as one of the flavonoids could well be juniper berry.
