Wonderful for Allergen-Free Baking
This is the 2nd bag of Ivory Teff I've bought from Tenera grains -the first was a small bag to see how it worked out for us; this big bag because it works beautifully in a multi-grain bread recipe & I bake 2-4 loaves per week with it.I was introduced to Ivory Teff when adapting recipes out of 'Celeste's Best' cookbooks. Before her recipes, I had never even heard of teff flour before! I've been using a LOT of ingredients I had never heard of before, trying to bake without: wheat, dairy, eggs, yeast, rice, corn, coconut, bananas, garlic...just to name a FEW. It is a struggle, but having access to quality ingredients and having already been baking gluten and dairy free for 16 years has helped.I even received a thank you card from the farm in my mail yesterday -who does that any more?! I found a couple of recipes on their website that I'm excited to adapt for my family and try out! I'm very impressed and will be buying from Tenera Grains often.

Beautiful flour
I wanted to use ivory teff flour in a special cookie recipe but had difficulty finding it locally. I ordered 2# from Tenera Grains through Amazon, and it arrived quickly and well-packaged.I opened the bag and the flour smelled very fresh. It has a bit of sweetness to it. I combined it with tapioca flour to replace wheat flour and the result was delicious. The pleasant taste of the teff came through and amped up the recipe considerably.Teff flour is more expensive than wheat flour, and ivory teff is even more difficult to find. Tenera produces a beautiful and clean flour, and it seems to be freshly milled. And, it's nice to know I'm supporting a family farm.

A little 'gritty' for my liking. I prefer brown teff so far.
Ivory teff is not as good as brown teff (at least the ones I've tried so far. This seems to have more of the 'grit' in it that feels like sand (only not quite that bad). The brown teff has more flavor in my opinion. The shipper was very cordial and even sent a hand written card thanking me for my order. I'll probably buy their brown teff and try it next.

Good.....but then.......
I would have given this flour a higher rating if 1) I would have seen that it was not gluten free before purchasing- I have to throw out my last loaf now. And 2) the last bag I ordered had worm-like creatures crawling in the bag- and I have yet to hear back from the company I emailed over 24 hours ago. Just thought they may be interested in this info for their own sake. :( Sad- it was good- but can't use if not gluten-free- waste of money :(

Had to go gluten free...
My naturopathic doctor said that it was best to go gluten free. I'm a baker, so I'm in the midst of developing gluten free desserts and Teff flour is one of my favorites. I don't mind the different texture.

Often I mix teff with oats, or oat flour, or some rice flour and some ground flax seeds as well. Teff has a sweet flavor so you can reduce the amount of sugar that you put in the recipe.Tenera Grain Teff is great qualtiy and good in both the ivory and the brown. Bake away!
