Farro (Spelt) has been in use for thousands of years, since the ancient days of Celts, Egyptians and Etruscans. Today, our skillful pasta makers know how to truly make the best of it. While it cooks, this pasta emits a distinct scent of fresh hazelnut and grilled aubergine. It has a firm and slightly crunchy feel reminiscent of bread crusts, a rich peanut butter flavor and a mild jujube aftertaste. We use italian biologic Dicoccum Spelt. Thanks to their elliptical cross-section, the larger surface, the complex texture, and the genuine, powerful flavor, Linguine are the best friends of a generous cuisine, but can also unveil an unexpected finesse when paired with vegetable sauces. Utilizzato sin da celti, egizi ed etruschi, da alcune migliaia d’anni or sono. Interpretato a regola d’arte dal mastro pastaio, in cottura regala il suo profumo gentile di machis, di nocciola fresca e polpa cotta di melanzana, in bocca risulta croccante, di crosta di pane, burro d’arachidi e con un leggero finale di giuggiola. Il farro usato è il Dicoccum biologico umbro.
