Review: Best Knife I've Tried - I have used many knives from many companies in my 70+ years of cooking and my Global 8-inch chef's knife is the best I've ever used. Less expensive than many brands, but you wouldn't know it to use it. This is a handsome, well-balanced knife that has a comfortable handle and a terrific blade. I can slice and chop an onion without tears as it slices without crushing and releasing lots of oils. I recommend this knife to any serious cook. My nephew suggested I try it. He was right: I like it so much (even though this is so versatile) I've ordered two more: a smaller chef's knife and a paring knife.

You've probably also considered offerings by Shun, Wusthof, and Henckels. Truth is, you really can't go wrong with the German knives. Nor can you go wrong with one of the Shun Elite knives. But that doesn't cut it (no pun intended), does it? You want the best. Quite frankly, I believe the Global G2 fits the bill. To be considered a 'good' knife it should: -Be correctly balanced - Have a full tang (or something similar). NOT bonded. - Have metal that can be sharpened to the point where it shaves arm-hair. - Retain its edge assuming regular knife-steel use. - Not stain (only applies to stainless steel knives) The Global G-2 easily exceeds these standards. It's a 'good' knife. But it really offers quite a bit more. Unlike the traditional French or German knives, it doesn't rely on weight to chop things. You'll notice it's a REALLY light knife when picking it up. Now, professional chefs who haven't used one might think this is a drawback. Interestingly, it isn't. Since the grind profile of the blade is relatively narrow, the entire knife becomes an agile cutting machine. The ergonomics are another key benefit of the Global G-2. You can really bring your hand up to the blade and comfortably chop for a while without any discomfort. After a TON of vegetable chopping, the light weight of the G-2 is a godsend. The steel is not obnoxiously hard (HRC) unlike some other japanese knives, so any decent steel will do wonders on it. In conclusion, this is hands down the best general Chef's knife I have ever owned. It is a nice improvement on the heavy German designs at a competitive price.

**Q: Are the Global knives dishwasher safe?**
A: The knife is 100% stainless steel and is absolutely dishwasher safe, do not believe the knife-nazi hype. THAT BEING SAID, I have a 3rd drawer in my dishwasher which is all the way at the top of the cabinet, and allows me to place the knife lengthwise with blade edge facing down in it's own slot, where the edge of the blade is held in small plastic tines so it cannot bounce around and hit other hard objects. DO NOT place the knife haphazardly in the rack where it can bang around against other items or metal racks. Occasionally I get small rust spots on the blade which come off in seconds with a green scrubby pad. No amount of careful handling will prevent the blade from dulling. It will need to be sharpened periodically. I have washed my global knife in the dishwasher for years and maintain a shaving sharp blade with a diamond stone and a polish-coated strop, however any reasonable sharpening system will work. "Never put a kitchen knife in the dishwasher" is an old wives tale and simply not based in reality. Splashing hot soapy water on any knife made of stainless/ceramic/plastic just won't cause damage, period. Do not place a wood handled knife in the washer because the wood will swell, dry and crack, which is where this outdated advice comes from.I do not own any wooden handled knives for this reason, wash all of them in the dishwasher regularly, and they all can shave the hairs on my arm. I sharpen about once every 6 months on the diamond "stones", and about once a month with a diamond coated "honing steel". A few strokes on my leather strop keeps the razors edge, and will remove any small burrs, "wire", or rolls of the edge.A good knife is a tool and should be treated as such. Use it, maintain it, and do not be afraid of it. They are not precious works of art that need to be handled with kid gloves.

**Q: are the blades stamped or forged?**
A: There seems to be some confusion with the previous answers given. Global makes stamped AND forged knives. This knife, the G-2, is stamped, not forged. They make a heavier duty line of forged cutler, which are prefixed with GF. The forged version (8.25") of this knife is model #GF-33 (http://www.amazon.com/Global-GF-33-4-Inch-21-cm-Heavyweight/dp/B00005OL4N). I own this as well as quite a few other Global knives, and they are all excellent. I actually prefer the stamped to the forged version. It is lighter and very nimble in my hands. It comes down to a preference to European type chef knives (Sabatier, Wüsthof, Henckels, etc) vs Asian type chef knives (Global, Shun, MAC, etc). I prefer the lighter style of Asian knife without a heavy bolster over my Henckels. YYMV. This knife is extremely sharp, however, and is one of my favorite knives that I own. Using it is simply a joy unto itself!

**Q: I am trying to register this knife with global since there is a lifetime warranty. There is no serial number on the knife, do you know where it is?**
A: After 23 or so years of use, had a smaller Global knife snap between handle and blade.  Global fully honored the warranty, fully replaced it.  I don’t recall ever registering it, Global just asked for photos of old knife and the pieces back once new one arrived.  My other 5 knifes have had zero problems. Great knife, great company that backs its products

I have used many knives from many companies in my 70+ years of cooking and my Global 8-inch chef's knife is the best I've ever used. Less expensive than many brands, but you wouldn't know it to use it. This is a handsome, well-balanced knife that has a comfortable handle and a terrific blade.
