I haven't had to replace the wire yet but it looks very easy to change and adjust. Since I received the KITCHENDAO slicer I have used and cleaned it daily. It cuts cleanly and is a breeze to clean with just a little soap and water then I let it air dry. I use it so often that it is more convenient to hand wash rather than machine wash but it looks like it would be fine in a dishwasher. I wash the slicer promptly after using since the cheese will dry and harden on the cutting wire which makes it more complicated to clean it properly. I can't speak to the marble or wood based versions of this slicer but I'm extremely pleased with the stainless steel version and highly recommend it!
