Q: What is the width of the clip?

6 1/2 inches and has a nice grip. We buy the large bags from Costco and it works great (fold the top of the bag in from the sides and then fold over to clip).

Q: What is it made of? The picture looks like a plastic ceramic-like material. I'm wondering if I should spend the extra money for stainless steel.

I am not that good at identifying materials but I agree that it looks to be like a hard plastic. It is the strongest clip I’ve ever used. I use it to keep 40 pound bags of dog food folded and clipped tightly at the top. I can’t imagine needing anything stronger. So far it seems to be as tight a clip as when I first bought it.
