Can I cook a 20 pound turkey in the oven using this?

I wouldn't try it on this vertical roaster but there are taller ones meant for turkeys. You'd also need to be sure your oven has room for a standing up turkey, no matter what stand you use. They work fine for 5-6 pound chickens but I think they are even too small for 8 pound chickens.

is it too big for a game hen?

I use a small one for Cornish game hens.

Do you need to tent the chicken with aluminum foil while cooking?

Do you don’t. What I do is wrap the aluminum foil on the vertical roaster itself. It makes clean up easier. Put your salt and spices on your chicken and roast at 350 degrees until golden crispy brown (2 1/2 to 3 hrs. . I use salt, garlic powder, black pepper and Hungarian Paprika. It’s delicious!

how can I best use a lemon in roasting my chicken with this device?

I would put the lemon slices in the loose skin at the top of the breast. Be sure to spray the device with non stick spray. I learned the hard way how hard it is to clean the stand if the chicken sticks. Otherwise a great stand.
