Smooth, creamy texture
Most high-octane dark chocolate tastes surpassing bitter to me, with a strong sour aftertaste. And they all seem very hard, very brittle. However, all of Kallari chocolates--even this 80 per cent bar--tastes sweet, almost mild, with fruity flavors and the creamiest texture I've ever had. I think that part of the reason Kallari chocolate has such a smooth, buttery aftertaste is that the manufacturers use the cocoa butter derived from the same cacao beans that went into the chocolate. Many other manufacturers buy their cocoa butter in volume from outside sources and store it until they need it. In addition, Kallari is a collective of about 850 cacao farming families. They share the profits, and refuse to use insecticides because they don't want chemicals in their air and water supply. So, they're organic and green. Their 70 and 72 per cent bars, although pure dark chocolate, taste and feel in your mouth like Swiss milk chocolate, but each has various fruity and flowery aromas.

Wonderful
I really like this chocolate. Over a period of months I sampled most of the dark chocolate at Whole Foods (sad I know) and this was my favorite. This is a nice blend of chocolate flavors. What sealed the deal was the fact that the profits actually go to the growers in they farm sustainably. I have no association with kallari but the person who does and wrote the review above knew what they were talking about.

Slightly warm is best!
When I first received 2 bars I ordered I was disappointed to see they were cloudy on the outside - and according to the back of the bars, they both were from different batches. This is a chocolate no-no. However, being that I love chocolate, I still tried Kallari out. I was at first not impressed, like another reader, it seemed to hold less flavor on the palate than I was used to with the ultra-dark chocolates. That was on a cool day in March. Then on one hot day in April, I tried it again and the warmth of the day seemed to melt the bar slightly. And the cloudiness on the bar had disappeared! The warmth allowed the milkiness of the cocoa to come through. I ended up really enjoying the flavor! Just like other readers pointed out, it has a buttery soft flavor that one usually associates with milk chocolate. I really enjoyed the feel on my tongue. I plan to re-order this one and nibble on it as a summer chocolate. On another topic, I usually eat bars that are 80% and above because of the excess of sugar. Even at 75% cacao, this bar has only 13 grams of carbs for a half a bar (35g). So if I'm eating my normal serving of two squares of chocolate, it barely has any carbs. So as long as the weather is warm, this one is a keeper for me. 1 star off for cloudiness on the surface of both bars that were sent.

Fantastic!
I have to say that I am biased toward this, as one of my college housemates is responsible for starting the Kallari cooperative, which is now the livelihood of many indigenous people in Ecuador and has prevented the spread of slash and burn agriculture there. But beyond my admiration for all that she has accomplished and has led others to accomplish, this is amazing chocolate. It unfortunately is not available for retail sale in my area, so I haven't had the opportunity to sample much, but I gave it to my mom for Christmas this year and she immediately wanted to purchase it for all her friends and relatives, if that tells you anything.

Ecuador dark chocolate is great, but skip this one
Ecuador dark chocolate is great, but skip this one. It's bland and undistinctive. There are much better options at this price.
