About Ceramic Sharpening Rods Ceramic sharpening rods are ideal for keeping your knives in perfect condition. The fine surface makes these steels suitable for even the finest Japanese knives. In contrary to regular sharpening steels, ceramic sharpening steels can also be used to sharpen dull knives. If the knives are damaged or extremely worn, we recommend to have the knives sharpened first by a professional knife sharpener. INSTRUCTIONS: 1. Sharpening stick are used by placing the near edge of the blade against the base of the steel, then sliding the blade away from yourself along the steel while moving it down - the blade moves diagonally, while the steel remains stationary. 2. This should be done with the blade held at an angle to the steel, usually about 20°-25°and repeating on the opposite side at the same angle. This is repeated five to ten times. 3. Please wipe it with wet cloth or rinse it with water after sharpening the tool, and then dry it. Clean the steel surface with a soft brush and put it in the air to make it dry.
