Q: would this bag be large enough to hold a field identification book, plus a 12" chisel, a 22 oz rock hammer and a loupe?

Hi, I majored in geology at college. Worked in field some and quit to have children. However, for 45 years have taken extra classes, worked with Boy Scouts, and school kids (thousands). This bag is perfect to carry tools with some room for specimens. Besides what you listed, I also carry a small sledge hammer. Hope this helps.

Q: How many pockets are there in total on this bag?

There are pockets on each end side that are about 2/3's the height of the body of bag (about same width). They have snaps to close. Inside there is a lighter material dividing the bag into two sections (1/3 and 2/3) . The back has a pocket with snap. It is about size of back of bag. On the front is a flat, double stitched, with two rivets that could be used to attach items. The seams are covered and double stitched. The shoulder straps are riveted. The material is a good quality canvass. It has stood up to my field work. Would like to get another. I hope this helps. Pat

Q: Can anyone recommend the canteen/holder in the photo? Looks like alice clip compatible, but us there one available on Amazon?

it took me a while to track down what's the canteen pictured, but since it's Stansport I started there. It turns out it's there "Stansport Cotton Canteen Holder" but isn't available here on Amazon. However it allowed me to locate which clips were used. Here on Amazon I have located the following canteen holders which appear to be compatible: Goetland Stainless Steel WWII US Military Canteen Kit 1QT with 0.5QT Cup Nylon Cover G.I. -this one is specifically the 1qt model as the 1.2qt model uses a different type of clip. TargetEvo Stainless Steel Military Canteen 1QT Portable with 0.5QT Cup Green Cover Camping Hiking G.I. -same deal as the Goetland, only the 1qt model shares the same clips. Maxam 32oz Aluminum Canteen with Cover and Cup These all appear to share the same clip and more importantly SHOW it. I know this answer is late but I had the same question and wanted to leave the answer here.
