Q: McCormick no longer lists lavender as an ingredient in its organic herbes de provence. Is it still there, or has it been replaced by sage?

I noticed this too. I keep a bag of dried lavender on hand that I purchase through Amazon . I love making organic creamy lavender icecream .So I will add my own organic lavender to this , otherwise the spice profile is incorrect .

Q: Why aren't all of the herbs it contains listed on the label?

I agree all the ingredients are not listed on the label. The jar I received had fennel in it, which is very surprising.
