How well would these cope with dogs using the lawn?

Copes really well with my dog using it. And it doesn’t go brown from dog pee like grass does.

How high does it grow?

white clover grows to about 6-9" high, red much higher, so i grow white in between veg to suppress couch grass, and red in between fruit bushes. You can strim them before they get too high and let wilt into soil. Part of permaculture ideas, 100 gms wont go far, i get a kg

How fast does this spread?

Depends on the weather. Seeds in contact with moist earth and high summer temps like last week brought on new growth fast. I've had to use 3 kilos on a very sparse medium-sized grass lawn. I found there was not enough in this small packet so had to find larger quantities elsewhere. I'd say 2 - 3 weeks you should see shoots. I bought my first lot here on 5th april. It's taken since then for the result to look very good. Birds ate most of the first lot of seeds. Would attach a pic but no pic icon here, so it's worth persevering with.
