Widmers is the only manufacturer of authentic brick cheese left these days. And it is awesome. A washed rind, Mould ripened (b. Linens, red smear). I am a home cheese maker and make my own version. Also spectacular, but still striving after many years to achieve Mr Widmers outstanding flavor. If real American Brick is what you want, I know of only 2 places you can get it. Here...or at my house. Enjoy a grilled cheese with this. WARNING. If you are not familiar with Old Time Brick, it is a pungent cheese, aka mild Limburger. Deliciously sweet and complex flavor. An American classic from back in the day. Enjoy!
