It's just cast-iron! What's so special?
3 stars not because there is anything wrong with it and not because I don't like it BUT can you honestly give cookware an 'I love it' rating? I think not. Dammit, it's a chunk of moulded cast iron and lump of wood!The biggest and more important fact is the cast-iron pan comes unseasoned, this is most important, YOU have control of the seasoning process. I happen to think this is the only way to purchase non-enamelled cast-iron cookware. I have three cast iron frying pans and have spent the last 5 years getting them to the ultimate non-stick surface.Buying pre-seasoned gives you no idea of what oil has been used and whether the oil is suitable for food use...you have been warned.To get the Black non-stick coating on a glittering naked cast surface needs time, lots of it, and patience along with a HOT oven, currently after five sessions of 'seasoning' the surface is golden brown it'll be at least a year before it's black. If I used the pan at restaurant levels of use, the pan would gain its seasoned finish very much faster. If you use your oven daily then you can speed things up by heating on the burner oiling and allow the pan to cool slowly with the oven.What you DO NOT DO is thoroughly wash seasoned cast-iron ever! You may briefly soak any crusting off the seasoned surface then you MUST use a tea-spoon or two of vegetable oil and heat the item until the pan is hot...not smoking hot. Finally with pan hot wipe it over with a piece of kitchen towel to spread the oil evenly then allow it to cool slowly.Don't bother seasoning the pan-handle, if you must...you can flame age the wood but I have not bothered, the sizzle pan will gradually singe the wood as the pan is usually running 300-450F when you serve a sizzling portion to guests...meaning that most thin hardboard or MDF table mats will be reduced to ash on contact, you have been warned .I use the pan to provide a 'thermal store' in a halogen oven at which it excels. Until it is properly seasoned it won't get used to convey cooked on a burner meat/veg portion, it is not designed for direct on stove cooking unless you fancy regular 'flash-over' stove fires. It is a sit at table very hot food serving experience, it is not a TV supper on a tray serving item.You have been warned. Buy this you won't be disappointed, but do please give it the attention it needs to give of its best.
