Having decided to start a new business in the country, the Scotts had planned to work in tourism, and Bacheldre was being sold as a campsite that just happened to have a watermill attached."There's been a mill here since 1575, and the idea of keeping that heritage going really appealed to us. The mill was a working museum when we first came across it but was only grinding around a tonne of grain a month. We went into it as complete novices, but learnt quickly. We have increased production as the business has gone from strength to strength, and we have won many awards for the quality of our flour, our packaging and our business. Our success is really down to our attention to detail and the traditional methods we employ for our milling, and also the way we pack it. By stone grinding the flour we retain all the natural goodness and flavours of the wheat germ. Our range of bread, home baking and speciality flours are a must for the home kitchen through to Michelin star restaurants."There has been a water mill at Bacheldre since 1575 and the current building was built in 1747. The mill was built to service the 500 acre estate of 'Crow Wood' including the hamlet of Bacheldre, it has been mainly used during the winter months, due to the supply of water to the mill, and for such a small estate only a small amount of feed and flour was required.Today we have grown the business and although we do use motors to turn our stone's, this has been done sympathetically to match the speed that the water wheel turns the stones, we can mill longer in the day, but not faster. We use a green energy supply and we are now working on installing an electric generator to the waterwheel to use the water to create some of the electric required. Really Great Bread
Having owned a breadmaker for about 14 years and used it continuously over that time (we are now on our third machine) we have tried a variety of flours. Some of the best come from small flour mills like Bacheldre and we have sought out these when we have been away on holiday.We used to buy from Rowsley mill in Derbyshire but as they no longer mill there we had been looking for an alternative. The supermarket flours are OK but we prefer to buy in bulk as we use it daily and buying small bags is just such a hastle. Dove farms supplied large bags to our local Organic shop so we had been getting theirs regularly but found that there were some quality issues and that the bread wasn't rising properly. Having checked everything else, including getting a new breadmaker, and trying by hand we concluded it must be the flour. I had a chat with some friends and they had also had some issues with their flour from the same source so decided to try mixing it with some other brands. This did seem to make a difference so when we came across Bacheldre we decided to try it. They do small packets in a mixed collection so we tried a few eventually settling on the Malted 5 seed flour. As we can get this delivered in 16kg bags it is ideal for us and by subscribing we not only save money but also don't need to worry about ordering (although I do need to check when the delivery will be so we don't run out). It also supports a small industry and keeps part of our heritage alive, which I like.On the whole I like the bread the flour makes and the quality is great. I lke the convenience of ordering via a subscription, It's easier for me, and I like the price. I would buy this from a local supplier if it was available and delivered (I'm a pretty strong guy but carrying a 16kg sack of flour 4 miles home is a bit too much even for me).

Great Flour
a very nice brown flour. Makes a good solid loaf with taste and consistency. I use fresh yeast so have not tried it with instant granules but would suggest it would be equally as nice.

Fennel fennel fennel!
Far too much fennel, which is a shame because the flavour behind the fennel seems fantastic.
