Q: Does this product let the door open wider, close to the wall than an old school stopper?0

It is adjustable and can be set so the door stops just before the door know touches the wall. You should be able to adjust it so that it opens further than a traditional floor wedge stop. Note, the hinges will flex a little when the door is opened with force so you need to allow for this over travel when installing.

Q: Does this hold the door in the open position or closed position

its a door stop. so when you open the door the hinge only allows the door to open so far then stops it.

Q: Will this work on an exterior door? I have an 8’ French door that hits the wall.

Regrettably, these don't work at all, not even on a 28" hollow closet door. No way even 3 of them would work for you.
