Q: It says adjustable, does that include the angle?

The angle isn't adjustable. The only adjustable part is the Newton meters of the top screw of the part of the stem that connects to the steerer tube. It says 8-10 NM there. I assume to adjust the dampening a bit

Q: Any particular reason they list in the description it is not a mountain bike stem? I ride my gravel bike on light mtb trails. Would this hold up?

I ride mine on a gravel bike that sits have two sets of wheels for. The ones with 50mm tires I ride on mtb trails. I’ve had the stem probably a year with no issues
