is it possible to plug into headphone jack with right cable?

We haven't tried, there's micro usb to usb cable. If you do, let me know if you can do it. On the overall it is a good mike for what it is meant for ;)

Is the cable mini xlr to usb? if so would it work mini xlr to regular xlr then fit it in a mixing desk?

No. it's mini USB on the mic end, USB on the PC/Mac end

what does it record on to

It records on to the device it's plugged into. It doesn't have it's own storage. If you meant what is the output type format, well that total depends on the software you are using to record with. E.g. Audacity (Most codecs) / Window Microphone (Wav)

is it possible to plug into headphone jack with right cabel?
