Q: I can't decide between the sailor pro gear slim, the sailor 1911, or a lamy 2000. which would you get and why?

I have all three pens. The pens are all quite different. There are multiple online reviews which can better explain the differences. The sailors are cartridge/converter filling systems; while the 2000 is a piston filler. In my opinion the sailor nibs are a bit smoother. And as a general rule the Japanese nibs will run "finer" (smaller line width) than the Getman counterpart. As between the sailors, the 1911 will be larger in hand and the pro gear slim is a smallish pen. For what it's worth I have all three pens you mention, but my "daily" writer is the full size pro gear. Hope this helps, welcome to the rabbit hole. If you buy cartridges, no. You can use only them. But I highly recommend buying a converter, if you like to use different bottled inks. As for a waterproof ink, I don’t know if sailor makes them, but I know what Noodler produces some, they call them “bulletproof”.
