There is nothing to compare these with
I have owned these knives for about 6 years now, and although I admit I only using them for cutting raw meat or vegetables, and only on a wooden cutting board (i.e. I take care of them), have never yet had to sharpen them, and they are still absolutely razor sharp. Once you buy one, you'll buy more, nothing else will ever do. I have a set of Sebatier for everyday use and sharpen them everytime I use them but they are never as sharp as these marvellous, but expensive beauties. Prefectly weighted, I don't think you'll ever find a better kitchen knife.
