Best of the supermarket panettone
Italians buy a lot of panettone, all year round. We in the UK get to see it in the supermarkets only around christmas-time, and I suspect it's a similar story in other european countries as well as the US, but in italy it forms a fairly routine breakfast (toasted, buttered) or after-dinner treat (plain or with mascarpone, accompanied by a sweet moscato d'asti) regardless of whether it's christmas or not - though admittedly it's a lot easier to find in the shops around the religious holidays. They tend to divide their panettone into the artiganale (fancy, expensive, to be found only in bakeries or online) vs the factory mass-produced version commonly available in all supermarkets. The consensus seems to be that there is too little a difference in taste or texture to justify paying three or four times the price for a panettone artiganale, particularly in view of the fact that the mainstream italian producers are legally bound to use high-quality ingredients which have been carefully specified. So if money's no object to you, by all means order something online (or in person) that costs upwards of €30 from one of the storied pasticcerie milanese (the marchesi, or peck, or sant ambroeus, or cova - there are a few). For the rest of us, sticking to a decent supermarket panettone is a more than acceptable substitute. The original bakers producing it back in the interwar years were one Angelo Motta (who opened his bakery in 1919 and was responsible for turning what had hitherto been baked as a low, compact loaf for centuries into the common tall shape we're all familiar with today), and his main competitor, Giacchino Alemagna. Motta made his cakes for the common man, whereas Alemagna priced his confections higher. Neither companies exist in their original form anymore, having both been taken over by bauli (who produce what is probably the most popular supermarket panettone in italy today, in those ubiquitous light purple boxes) which, last I checked, was owned by nestle. So your best bet for a decent, keenly priced supermarket panettone is the handful of famous names - bauli, motta, alemagna (the latter two still come packaged under their original names despite being owned by bauli), bindi, tre marie and maina. Opinions will vary as to who produces the best one, but opinion amongst italian food critics is skewed in favour of bindi and tre marie (in that order) forming the top tier (they are also a tad more expensive than the others, and good luck finding a bindi panettone if you live outside italy), with motta, maina and bauli bringing up the rear and alemagna generally considered the poorest of the lot. Most italians buy bauli or motta or maina as they are (relatively) cheap as well as very good - spend a little bit more on a tre marie and you won't be disappointed.
