Is it possible to buy just the grate on its own and if so how deep would it be?

I don't believe that it is possible to just by the grate, it comes as a single package

Would this be suitable just to have soak away into stones / pebbles under drain . Would need to drill holes in base ?

To do as you have asked you would need to drill holes in the bottom as this is designed as a channel for water. I believe that it would be suitable to drain into stones.
