These pans heat up so quickly meaning I can reduce the heat sooner and keep on a lower temp whilst cooking. I'm really happy with the fact I don't need to use oil to cook everything, even fried egg! I've definitely noticed these hold the flavour of the food better and meat is more tender too. The utensils and the felt pan separators they come with are great. The only thing I would say is the utensils stain easily. My spatula has gone a bit yellow from when I made a curry but that is literally the only tiny fault.
