With the induction stove my double boiler no longer worked and all the ones I could find were too large. I tried a cheaper item that had non stick coating so you could not use metal utensils and the temperature was difficult to regulate. I saw this on that used water so I thought I would try it. I love it!!! The chocolate tempurature is easy to maintain which makes things so much easier when dipping or doing candy molds. Clean up is super easy. Other than the temperature settings being upside down there is no down side that I have found after 8 pounds of chocolate for the holidays. I even bought extra pans so that while I am working with the ones already melted I can start my next batches. Again, I love this product. Review: Poor instructions and not well made. - This product was very disappointing. When we put in the exact amount of water specified in the instructions in each well and put the inner tubs in, they floated, but when the chocolate was added to the inner tubs to melt, water from the wells overflowed and ran over the counter and into floor. The candy thermometer we used as a double check of the temperature of the chocolate (not part of this device) showed a different temperature than the one that we had set on the machine's dial. I returned it. ### ⭐ Do not buy this machine *by A***R on December 12, 2025* I had this machine on the lowest temperature setting, which should've been perfect for my chocolate temperature, but the temperature of my chocolate went out of control almost immediately. I had to turn the machine off and would only turn it back on when my chocolate started to cool too much. I turned the machine back on for only about 5 to 10 seconds and the chocolate's temperature would shoot up over 96 degrees and I had to cool it back down again.
