15 Minute Vegan: Fast, modern vegan cooking : Katy Beskow: desertcart.co.uk: Books Review: Fast, easy and you can taste all of the flavours. - This was the best find for a cookbook in general and a vegan one on top of it all. I was lucky in that I just started the veggie path and am considering the full vegan one. The breakfast of avocado and tomatoes I did on brown bread and my partner loved it as much as I did (excusing the fact that I put way too much parsley in it). I enjoy cooking, but would have never thought of that for breakfast. The chilli was great (I'm a Texan, and never enjoyed beans in chilli, which is a West Texan thing us real Texans never understood). I'd actually eat this constantly, even if I miss ground beef and no beans (yeah!). The peanut butter smoothy was awesome to drink on the way to work (even this morning). I like that the recipes are simple and quick. Some people talk about blandness or missing spices, but just about everything can have substitutes. Being in Europe, you can do kale instead of spinach (just throw it in a bit earlier) and use frozen butternut squash instead of fresh (if out of season or for those busy nights). You can cook large batches of different beans in a slow cooker (as you can buy a timer for a socket which lets it turn on 4 - 6 hours before you get home) and freeze what's left over. Her recipes let you use fresh or frozen which gives so much flexibility. It also covers a large range of recipes, from breakfasts to deserts (if you like deserts, which we don't, so haven't tried them yet). Above all, I've enjoyed actually tasting the vegetables instead of them being lost in sauces. Spices are easy to make the night before (heck, just buy them as seeds instead of ground and buy a little hand spun or electric coffee grinder as it's much cheaper to keeper to buy the seed versions, like cumin). So far, while I might substitute here and there, like with all recipes from any cookbook, there's little I would substitute so far unless I didn't have something. We absolutely love it. Review: A must have in the kitchen. - I am so happy with this book... that I have circumnavigated the horrendous eyesight test that is the new sign-in system, just to write this! I have had the book for some time now. I am not a vegan... but have been increasingly conscious of the fact that we probably do need to start looking into alternatives to meat, to do our bit for the planet. I therefore bought a copy of this book for my wife and myself - having been told by my sister in law (for whom I had sent it as a gift) that it was excellent. She is a vegetarian - I am not trying to convert anybody! This book really is excellent. It removed my fear of vegan ingredients shopping (bear in mind I am new to this), the recipes are really fast to prepare, and the results are absolutely delicious. The price of the meals: really cheap. I think we just brought one recipe (enough for four lunch portions) in at under ยฃ2! However as a purely food based review: just a joy to eat everything we have tried from this book. Oh, and it is beautifully bound and presented, too! Also beautifully clear and easy to follow instructions! Lovely to own, and makes for a lovely gift.

Easy to find ingredients. Cheap ingredients. Tasty easy to follow quick recipes = A MUST BUY
A great recipe book. nice quick easy and tasty meals. I don't prep my food before so I would say it takes me around 30-40 minutes to cook up each recipe I've tasted. The food is amazing especially the sweet and sour dish. it tastes incredible. It's a regular dish I cook now and my quick go to meal! A great book as an introduction to someone that wants to experiment with vegan food. Great meals to introduce friends to vegan meals. if your not a vegan a great book to cater for those friends that are vegans when inviting them over for a meal. I'm only a 3 day week vegan so not a proper hard core vegan and absolutely love this cook book. this is a no brainer if you're into cooking, a vegan or someone looking into cooking vegan. The ingredients are easy to find in your high street shops and cheap too.

Easy to follow, nice pictures
The cook book is nice and I get the gist of the everydayness of the recipes. However lots of sugar is used and salt. So I might say it is rather old fashioned and not that exciting. BUT for people transitioning from a meat or vegetarian diet to a vegan one I think the book finds its purpose there. I've been a vegan for a long time and eat very healthy food (with a slip on the sugar slope occasionally). Though people I know (most of them) eat fatty and sugary foods as norms, so this book won't frighten them off vegan food!!

Stops us being lazy and having frozen oven foods when were in a rush
We love to cook from scratch, using seasonal local produce. But my other half hates how much time it sometimes takes. So we have purchased this book to pre plan some super quick but very nutritious vegan meals that don't take tooooo long. So far, so good. We tried the sweet and sour cashews....and wow! Seriously great. We added some quorn chunks for added protein and a sprinkle of sesame seeds and it was better than most Chinese takeaways we have ever got. That's our fave so far. Some really simple recipes in here, most with a picture. We've planned out each week based on these (plus what is in our veg box), and we always look forward to them. We have the majority of the ingredients needed already, its just the veg we have to plan to have in. It really is pretty quick too. Sometimes not 15 mins....as we tend to add a bit more to the recipe than it states, but it definitely doesn't feel like a chore when you are doing it. When you are starving hungry and want to stop reaching for the frozen oven meals that we have 'just in case' then this book is for you! :)

Perfect aid to transition to less/no animal products
A vegan friend recommended this book when I asked for advice about recipes with no meat. It is a beautiful looking book, photos and recipes laid out well. More importantly it is very easy to follow, the food delicious and Katy provides great tips at the beginning on a few store cupboard stand by ingredients. If, like me, you want to eat less/no animal products, but think you will have a limited diet, this is definitely the book for you. I eat a far better variety of food, make the effort to cook from scratch and have yet to miss meat or dairy.
