I don't actually use them for mixing colours but use them for laying paint out. My studio mixing surface is a big, 18"x12", porcelain butchers tray which is a lovely mixing surface but has one drawback. Butchers trays are designed to channel moisture to the edge, which means that if you lay out your watercolour or gouache round the edges it will tend to dissolve and mix in an annoying and wasteful manner. Whereas if you put your colours in one of these at a corner, your colours remain unwetted. Also if you wish to change palletes these can be stored in a sealed food bag with a lump of damp synthetic sponge (real sponges quickly go sinister if left sealed and wet) until you wish to go back to it. This is great if you have more than one painting on the go, once as I often do, and experiment with different ranges of primaries within a limited palette.
