Its five ply construction allows it to heat evenly and retain its heat fairly well. The pan allows the liquid to reduce quickly while not scorching or over reducing the contents in the pot. It also allows you to stir in the pot very well with it nice gently curved sides which allow you to get a silicone spatula or wisk in the corners without needing to stop or slow down the stirring motion. The handle is very well balanced making the pot feel light while being a nice weight so it doesn’t warp easily while heating it up. The lid is also a nice fit so steam won’t escape for when you need to cover it. I definitely will be getting the 2 or 5 quart when I save up for it.
