Coquet soaks their handpicked cloves of garlic in fresh water to remove most of the garlicky "bite", leaving behind just its natural sweetness and a delicate garlic flavor. These pickled, raw (uncooked) cloves of white garlic pair perfectly in a tapas with jamon, Marcona almonds, piquillo peppers, Manchego cheese and a cold glass of beer.
