This is one of my favorite brands of nut oils. Always super fresh with great shelf life. I love both their pistachio and hazelnut oils for salads. A few pistachios on a salad or in a pasta dish is a nice alternative to walnuts or almonds. When you use this oil in conjunction with the pistachios, the lively nutty taste permeates the whole dish. The recipe called for almond extract to go into the cake, the pistachio oil went into the frosting, when we first opened the pistachio oil it had this rich aroma of roasted pistachios, and when the cake was done the almond flavor and pistachio flavor complemented each other perfectly. Mom was very happy with the results especially since this pistachio oil is not that easy to find, I purchased all the other ingredients from our local grocery store, but the pistachio oil was the one ingredient that I couldn't find anywhere, so I found it on Amazon for a reasonable price, ($10.99), so thank you Amazon.com.One more thing; I would have loved to have posted the recipe on my review, but it's actually 2 recipes; one for the cake and one for the frosting.
