Probably because it is "sugar free". I have no idea why, but it's not a placebo, "diet" versions just don't quite taste as nice even when you add your own sugar to it. In terms of what I do taste... The flavor is a bit weak yet it is stronger on the acid. I tried it with sugar but it doesn't quite tame the sourness. This tastes more like the candy Blue Raspberry that's sour, rather than the Blue Raspberry that comes from a slushie or shaved ice you might get at a cinema/carnival. On the plus side, the color is extremely potent even with a stronger dilution- I am sure it would look rich on shaved ice. I would have given it 4 stars, but for the price I feel like it isn't worth it to me, not because of the diet taste, but because the flavor is on the weaker side and trying to use more syrup with extra sugar doesn't help the flavor much, it just turns more sour... (It's not devastatingly sour. But it is still a let-down and IMO not even worth buying if you are serious about getting something with a strong Blue Raspberry "flavor"). Can’t return **Q: Is this ‘dairy friendly’ to be used with steamed milk or cream without curdling?** A: I use this to add to protein drinks to add flavoring. When added with milk, I have never experienced curdling. This is a cold process, so can’t answer your question in regards to steaming. **Q: Can you use this to make jello?** A: If you're making the jello from scratch, meaning using gelatin and flavoring...I would think you could do just fine. I have not done such a thing but my mother used to do stuff like that. I can't see why it wouldn't work.
