Why use malitol? It has a relatively high glycemic index. Much better to use stevia or Erythritol, where glycemic index is near 0.

Chocolate is already bitter so the stevia bitter on top is likely unpleasant. Erythritol has a cooling effect when dissolving and when used in chocolate has a waxy texture. So maybe monkfruit or some other non-laxative blend... Hershey’s tried erythritol for chocolates in the late 90s? Or early this century. But it failed in the marketplace. Though it’s great where already dissolved like ice cream.

I wouldn't call it sweet. It has a distinct dark cocoa taste. I do not like milk chocolate because it's too smooth tasting.
