Hire a Proof-Reader!!!
So sad that I couldn't give more than three stars with this book because it certainly is difficult to find recipes that actually produce good quality faux "meats" from scratch like this book does. However, there are so many problems and inconsistencies with this publication that simple editing and proofreading could have - and should have - caught that it is not nearly as high quality of a book as it easily could have been. From the very first couple of recipes, misspellings, inconsistent use of measuring and temperature units, missing information and ommissions of cooking temperatures, yield amounts, weights, and serving sizes abound! There is even a seitan recipe toward the back of the book that I certainly hope no one even bothers to try (pg. 143): the flour types called for will produce nothing but soggy dumplings, if that. Overall, I am thankful to have found this useful, innovative group of recipes but if you are not already a pretty savvy cooker of vegetarian or vegan "meat" products, some of these recipes will leave you confused and worse yet, produce nothing but wasted food.

Not what I expected....

great recipes
This book has the most amazing recipes I have seen in one book at once. They are made from ingredients one would have in a vegan pantry. The instructions are well laid out. The recipes are exactly what I was wishing for, original, different combinations of ingredients, recipes that jump out and say "make me." This wee book is a vegan's treasure. Thank you for such an inspiring book. Two thumbs up.....................Maggie
