It's ok, I guess
Really hard to get a nice edge on these, it seems to hold an edge well but the process of putting an edge on these can drive you insane. The steel just acts oddly at higher grit stones, maybe sharpen to a 600 or 800 grit stone and call it a day. Anything after that and it just doesn't sharpen well.

Impressive Chef's Knife
This is an impressive chef's knife.It's quite large and heavy, but the knife is weighted such that it feels perfect when being held. The handle is properly sized for the weight of the knife and it's comfortable to hold and use.The appearance particularly notable. It has the characteristic swirls of 'damascus' steel, the patterns said to be the result of the process used to manufacture such blades - in this case 71 layers are claimed, with the particular alloy of steel used here also contributing to the strength and final appearance.I do not know how one can discern whether or not the blade is actually made using such a time consuming process. I do simply know that the result here is impressive and attractive and gives every indication of being a quality knife.In use this is also very capable, sharp and as mentioned well balanced.The real test will be how this knife is found to hold up over time, how well the blade will hold it's edge, and so forth. I will use this and see how it does perform. I am giving it 4 stars for now. It is a very high quality knife and I'm glad to have it and will use it. If I find that it turns out to be really exceptional after I've used it for a while, then I will not hesitate to bump the rating up to 5-stars but that will only be after extended use shows that the product deserves that. I also note that this is fairly expensive, not out of line for a high quality knife, although I'm not taking that into account in my rating.The seller, D.Worth, has been established on Amazon for about a year as I write this review, and their customer feedback so far has been very good but is very limited to date.This knife appears to be listed twice here on Amazon, for the same identical product. The 4 Perfections of Cutting
Dworth 8" Chef's knife, provided by vendor at a tremendous discount as a 'for review' item, is clearly a high end cutting device because of the quality of its blade, ergonomics, its looks/design and its packaging and presentation. So, let's talk about them all.BLADEThe most important feature in a knife, of course, is VG10 Japanese steel. No, it's not what Samurai swords are or were made of but, according to Wikipedia, was developed in Japan to be used specifically for 'professional' cutlery. It's currently the most popular high-end cutlery steel in Japan. The makers claim that it's a 71-layer Damascus-like blade which means it's likely to stay sharp longer and it's less likely to chip - anyone not sure what the '71 layer' means, look up 'folding steel' because it's quite interesting. The pattern seen on the blade is the various layers blended together. The blade is incredibly sharp. In fact, one has to be super-cautious and never-ever touch it sharp edge. I did, once by accident and the second time because, well... I was testing it and I got cut both times.The manual that comes with the knife advises that you always clean the blade after use and you never-ever let corrosive agents such as ketchup or lemon juice on it after you're done cutting. The proper care is to immediately clean it with water and wipe it clean with a cloth. And, since this is such an expensive knife, they do provide a microfiber cloth with the knife, just in case you needed one.The blade should stay sharp for a long time but, for when that time comes, the manual does dedicate 2 illustrated pages on sharpening techniques.For storage when not in use, there is a protective sheath which I would strongly recommend to keep and use because of the cutting edge being so sharp.HANDLEIt seamlessly flows from the blade. It has a good, non-slippery grip and is responsible for the knife's overall balance. Thanks to the excellent handle, I was able to cut, chop and dice with confidence and apply force when needed.LOOKSThis is not Damascus steel as some of the marketing seems to suggest. The last Damascus blade was made back in the 17th century and the secret method of making that type of steel has been lost. However, it is VG10 Japanese steel that 'looks' like the Damascus steel pattern on the blade. The knife looks, weights and feels high end and high quality, probably the knife you'd want to show off if you ever cooked in front of your guests.PACKAGING AND PRESENTATIONThe knife comes in it's own hard cardboard box that closes with a magnetic flap. Inside, the blade is protected by the Dworth-branded sheath. You will also find a microfiber cloth, a 'VIP card' that should get you 5-7-9% off when you buy a 2d-3d-4th Dworth blade and a little manual that describes the knife, offers some tips on how to identify a 'good' knife, has maintenance instructions and shows how to sharpen it. This could be easily a gift and I have no doubt that the gift recipient would instantly know that it's a precious object they are being gifted.The high price is, in my view, justified by the knife's excellent quality, utility and apparent durability. I feel that its 5 stars are well earned.
