If I have wired Ethernet throughout my house, can I physically plug in each unit to the network and have them function as one mesh wifi this way?

Yes, they work that way. The setup is: ------------
In words: 
1- Connect the Main Google Wifi WAN port directly to the modem, then connect the LAN port to a switch. 
2- Connect each ethernet cable from outlets in the house to the switch. 
3- BEFORE connecting the other Google Wifi(s) to the Ethernet, you MUST pair/activate/create the mesh with the Main Google Wifi. You MUST do this for each Google Wifi that will be connected to the network.
4- After pairing/activation/mesh creation, then you can take them to the location where you want to connect them to an ethernet port.

I have this setup and it works flawlessly.

What data does Google collect from this router?

The Google Wifi app and your Wifi points do not track the websites you visit or collect the content of any traffic on your network. However, your Wifi points do collect data such as Wi-Fi channel, signal strength, and device types that are relevant to optimize your Wi-Fi performance. With simple controls in the Google Wifi app's 'Privacy' settings, you can manage three types of data collected -- Cloud services, Wifi point stats, and App stats.

Can I set up a guest network that is isolated from my main home network?

Yes, but what I like most about that, while I have a main network for my self with a very complicated password because might have client information on network, the kids or friends might be visiting in town and always had a guest network for them, but with the google wifi, I can allow them partial access to my network, being printers, apple tvs, rokus , or sound systems. I have had this only one day, I am in a ranch style home on 1 acre, with 2 in each front corner of house and one in middle of the rear of the house and get reception on entire 1 acre though not the greatest connection on the edges but still fast and stable. also good connection in detached garage/pool house, might add one more for the detached garage/poolhouse to go from good connection to great connection

Some of the pictures show a single cord going to the router.  Does that mean it accepts power over ethernet, or are these wifi->wifi extenders?

Google Wifi is a "mesh" Wi-Fi system, they are not extenders for your existing router. The first Wifi point plugs into your modem with an Ethernet cord, and plugs in to power. Others plug in to regular power outlets in your home. They connect wirelessly to one another to create a single Wi-Fi network within your home. If you have Ethernet ports throughout your house, you can also hardwire each point. If you hardwire the units, you will still get a single Wi-Fi network throughout your house and the points will use Ethernet for connectivity between each other.
